The determination of being a chef moved the professor of catering department
The professor of the catering management department of Nan Kai University of Technology said, "the way we handle catering materials is very important. Practicing cutting technique is not only dangerous, but also requires concentration and hand- eye coordination. When being tested, you also need to take into account speed and aesthetic feeling. Do you really want to choose to study in the catering management department?"
Shang-Jhe said, "I like to cook for my family and friends. I want to be a chef and open my own restaurant to show more people the unlimited potential of DS patients. I am not afraid of difficulties and dangers and am brave in challenging new things. Although I need to spend dozens of times more time practicing than others, I am not afraid of hardship and will not give up. I believe I can make it."
At present, Shang-Jhe, a junior in the Department of catering management of Nan Kai University of Technology, has been through various tests bravely. He not only passed the grade C appraisal examination of Chinese cooking of the Ministry of labor on June 23, 2019, but also made great efforts to move forward towards the goal of other relevant examinations step by step.
 
Multiple disabilities and multiple talents. Spread love in time
Chen, Shang-Jhe's parents Chen Qing-biao and Zhang Pin-ling said that Shang-Jhe, who is handsome, articulate and outgoing, doesn't look like a typical DS patient, but in fact, he not only has to overcome all the challenges as a DS patient - intellectual inadequacy, muscle tone deficiency, congenital heart disease, impaired vision and hearing, abnormal thyroid function, etc, but also accompanied by problems of attention-deficit disorder and hyperactivity.
When in primary school, he met Zhou Yijia, a DS patient who has 23 street artist licenses, performing Ocarina on the Sunny Hills in Nantou. And he asked around and inquired about it. Fortunately, he could learn Ocarina and saxophone with Mr. Lin Qitong, and won the street artist licenses in Kinmen and Taichung in 2015 and 2016 respectively.
With multiple disabilities and multiple talents, he was praised as a model student in Taichung City in 2016, won the first place in the music performance of the 9th National talent competition for people with mental disabilities in 2018, won the first place in the 8th Yate Cup shooting under the basket of adult group in central and southern Taiwan, won the gold medal of Young Hero award of Taichung University, Model of Courage and Virtue, Outstanding Youth of youth day and other awards.
From then till now, Shang-Jhe never gave up, insisted on learning, learned swimming and basketball, trained his physical fitness, became skillful with Ocarina and saxophone in playing wonderful music. Under the cultivation of Mr. Lin Qitong, he followed DS Patients Orchestra to Hong Kong, Japan and the mainland China to spread love and affection in a further and more extensive way and create a loving interaction with the audience; From practicing cooking skills to making up his mind to be a chef and opening his own restaurants and spreading love with food and music, He wants to carry this loving meal to all kindergartens and nursing homes to as the seeds of love. He totally deserved the honor of a "DS Chef" and stood out from 2954 candidates recommended by all walks of life around the world and won the "25th Fervent Global Love of Lives Award in 2022" by Taiwan Chou Ta-kuan cultural and educational foundation.

Excellent in catering related courses
Taiwan's cuisine is well-known internationally. Chen, Shang-Jhe may be a little lag behind in physical wellness but he doesn't lose his aspiration. He hopes Taiwan's cuisine can create new style out of the old while keeping its first-class flavor.
Therefore, he has made great efforts in catering related courses. Whether the core courses - Introduction to catering, basic cooking, food equipment, catering service, or standard courses - cooking application, catering management, or practical courses - catering operation, special production, on campus and off campus internship, etc. Normal students may need to read or operate these courses only once, but he need to read or operate thousands of times to catch up with others.
All this learning for him is like a race between a tortoise and a rabbit. Although Chen, Shang-Jhe learns slowly, he always make up for his weakness with diligence, never stop and never give up. He gave full play to the focus and persistence of DS patients, seriously studied catering operation and service management in the digital era, including refined cooking skills, innovative thinking and humanistic quality.
Finally, Chen, Shang-Jhe gains the most outstanding achievements in catering related courses as a early bird, a worthy No.1.
 
The love of a mother looks for the opportunity
Due to the Down syndrome, Shang-Jhe suffered from illness since his childhood. After birth, he was always in and out of the intensive care unit and the operating room because of the congenital hypoplasia.
Five months after Shang-Jhe was born, his mother took him for rehabilitation, trying all kinds of methods from folk therapies to joining the Down Syndrome Association at the age of one year to take cognitive, oral language courses, and occupational physical therapy courses in the hospital.
When he grew up, he began to learn swimming, horseback riding, and attending scripture classes. All of the above treatments and studies were all in the hope that Shang-Jhe would have a healthy body and the ability to take care of himself.
Although the progress was slow, but seeing Shang-Jhe's growth, his mother was more than pleased and proud, thinking that all the hard work was worth it.
One day, when he was taking a class in the association, he was invited by Director Chen to sign up for an ocarina class. At that time, he saw the children in the ocarina class holding a small ocarina in their hands, and then play a beautiful melody under the guidance of the teacher.
Shang-Jhe's mother was pleasantly surprised—music therapy should be helpful to her child, and it can also cultivate the child's temperament. She thought she should seize the opportunity. From then on, Shang-Jhe met the savior in his life, Mr. Lin Qitong.
 
Play the first children's song after half a year
When Shang-Jhe started taking the ocarina class, his mother accompanied him like other parents, and the teacher taught everyone to follow the beat and sing together.
At this time, Shang-Jhe's mother discovered that he could not correctly play the tones of Do, Ra, Mi, and Fa, and his beats could not follow the correct pattern. He had to constantly find ways to train his sense of rhythm.
When he first started practicing the ocarina, in addition to practicing the coordination of the fingers, the mouth shape, the method of exhaling, etc., also make Shang-Jhe struggle for a long time, and every DS patient has some parts that they need to overcome.
The tune he learned at the beginning was the key F, since the fragile muscles in Shang Zhe's hands were still very stiff, the ring finger of his left hand could not be lifted alone.
At this point, the teacher instructed the children to use the right hand to assist and remove the ring finger from the hole, which was very cute and funny to others' eyes, but this indded affects the smoothness of the performance!
Therefore, in order to play smoothly, it is still necessary to practice so that each finger can move flexibly. After practicing for half a year, Shang-Jhe could gradually lift his ring finger and slowly play simple ballads and children's songs.
In addition, DS patient's oral structure also limits their playing a little. The bigger tongue leads to less flexibility, and the affects the coordination of facial muscles. It is also a big challenge in blowing!
At first, Shang-Jhe blew intuitively. After class, the teacher continued to encourage and guide him. After going home, he practiced hard, gradually learned how to distinguish timbres, and then knew the correct way to exhale and blow. He then could play in a more mellow tone and make the tune sound softer and more vital.
During his hard practice, Mr. Lin Qitong not only taught him the ocarina, but also reminded Shang-Jhe of the rules of class and correct body movements. The children gradually became more sensible and continued to improve himself.
But what makes Shang-Jhe's parents concern all the time is that Shang-Jhe needs continuous practice, once there is a little slack, the retrogression may ruin all the previous efforts.
 
Sail against the current
The saying "learning is like a boat that sails against the current, it will be pushed backward if it does not move forward" can be verified very clearly in DS patients. Therefore, Shang-Jhe could be tired in the process of practice, but he could not give up because of setbacks.
Thus, Shang-Jhe's parents took him forward in encouragement. Although the pace may be slow, they walked solidly towards their dreams step by step.
Usually, after practicing a movement in class, Mr. Lin Qitong will invite a child to play for everyone. After playing, he will praise the student's progress, and then encourage him and point out the part to be strengthened.
Shang-Jhe is a shy boy. At first, he didn't dare to express himself on the stage. He is also afraid of making mistakes, for which he will always be sad or angry.
However, in such a learning environment, Shang-Jhe also gradually changed his personality of fear of making mistakes, learned to accept mistakes and then correct and improve them, and become brave in expressing himself in class. He even volunteered to be the first child to play. It seems that he has found his confidence and stage in the world of Ocarina.
Swimming straight ahead - the best cardio training
Shang-Jhe has been swimming for eight years and has learned breaststroke, freestyle, butterfly and backstroke, but his physical strength is still not very good.
Every time he swims straight forward, it is a cardio training for Shang-Jhe. Besides improving his health, sports also have a positive impact on the playing of the ocarina. Enough vital capacity makes Shang-Jhe's playing smoother and more energetic!
Now, in addition to the practice in class, Shang-Jhe also seriously practices playing the ocarina after class every day. When he has time, he will also play ball games and sports to make his study comprehensive and solid.
With the encouragement of Mr. Lin Qitong, Shang-Jhe began to break through himself in 2015 and 2016 and got the street artist license in Kinmen and Taichung.
 
Spread positive energy cross the saxophone barrier
In addition, Shang-Jhe often performs in nursing homes and nursing centers around the country with the DS orchestra. Through the performance of ocarina and saxophone, he interacts and enjoys the music with the old person, and participates in the sharing of life education in schools at all levels.
The DS patients showed their spirit of studying hard and never giving up with the beautiful melody of the ocarina. Together with the wonderful explanation of teacher Su Yingying, it was even more touching.
Now, Shang-Jhe also began to learn the "Second Specialty" saxophone. In the new field, Shang-Jhe had to explore again and learn to control the exhale. If it is too strong, the sound might be easy to dispersed, if it is too small, he can't even make a sound.
This time, just like learning the ocarina, Shang-Jhe slowly explored the way to blow out a good sound. The difference is that with the encouragement of teachers and family, he was no longer afraid of encountering setbacks. Instead, he practiced more seriously with the love of music.
All this is inseparable to Mr. Lin's dedication and the strong support of his mother and grandmother.
Shang-Jhe, who fell in love with music, became more and more brave. In the melody of saxophone, his stage grows bigger and brighter. He also continued his original intention - to open a restaurant as a chef and spread love with food and music in a further, wider and more solid manner.
 
Achievements of Chen, Shang-Jhe
1.    Won the honor of model student of Taichung City in the 2016 academic year.
2.    In 2018, won the first place in the finals of music performance of youth group in the 9th National talent competition for people with mental disabilities.
3.    Won the first place of the under basket shooting adult group in the 8th Yate Cup games in central and southern Taiwan.
4.    2018 Grand Taichung Young Hero Award model Gold Award.
5.    Excellent Youth Award of 2019 youth day.
6.    On June 23, 2020, he passed the grade C technical appraisal examination of Chinese cooking of the Ministry of labor.
7.    In 2021, won the first prize in the painting competition in the 9th National talent competition for people with mental disabilities.
8.    Achieved excellent results on the 10th "I paint what I want to say" painting competition in 2020.
9.    Obtain the licenses of street artists in Taichung, Kinmen, Hualien and Miaoli with ocarina and saxophone.
10. Be enthusiastic about public welfare. Spread love to Hong Kong, Japan, Dalian and other places in the mainland through ocarina and saxophone performance, and encourage the disabled to work hard and realize the value of life.
